It is a mat-forming perennial. The whole plant is intensely glaucous. In areas of very mild winters, it produces leaves year‑round. Red-green flowers appear in loose. The leaves are very succulent, fleshy and brittle. They are picked, when young, and used fresh. The roots are lifted in autumn and dried for use in decoctions, liquid extracts and tinctures. Due to the presence of acid in leaves, the plant is preferred for kitchen use in soups, especially by the French. The leaves also make good spring perennial salads.
