It is one of the popular winter season, edible flower buds. It is a perennial plant. The ideal growing conditions for artichoke are cool and moist summers and mild winters. It grows up to 1.5-2.0 metres in height, with arching, deeply lobed, silvery-green leaves. The bud is composed of compactly arranged triangular scales in a whorl fashion around a central ‘choke’. Artichokes are low in calories and fat. It is a rich source of dietary fibre and anti-oxidants. Fresh artichoke is an excellent source of vitamins, folic acid and minerals like copper, calcium, potassium, iron, manganese and phosphorus.
