Lettuce is an annual glabrous herb with a thin taproot and an erect stem 30-100 cm tall, branched in the upper part. The leaves are spirally arranged, forming a dense rosette. It grows in a basal rosette at first, then either in a loose or a tightly rolled head, and eventually along an upright stem that supports the flowers. Lettuce is almost exclusively used as a fresh vegetable in salads, but some forms are also cooked. Many of the red and purple lettuces make excellent borders around cool season flower beds.
